Strawberry Cashew Apple Smoothie

MAKES 1 (12 OUNCE) SMOOTHIE
We love using whole cashews in smoothies. The soft tree nuts blend beautifully into smoothies, creating homemade nut milk right in the blender! Add apples and strawberries for a balanced, sweet-tart smoothie loaded with protein and healthy fats.

Ingredients

  • 6 ounces coconut water
  • 1/2 cup frozen strawberries
  • 1/4 cup raw unsalted cashews
  • 1 green apple (cored and rough chopped)
  • 2 dates (pitted)
  • 1 teaspoon lemon juice
  • Sprinkle of ice
  • Optional:
  • 1 scoop protein powder

Directions

  1. Pour coconut water into blender. Add remaining ingredients and protein powder, if desired.
  2. Blend on high until smooth.
  3. Pour in a glass.
