
Sunomono (Japanese Pickled Cucumber)
Serves 4
Ingredients
- 1/2 cup rice vinegar
- 1/2 cup granulated sugar
- 1 teaspoon kosher salt
- 1 large English cucumber (thinly sliced)
- 1 tablespoon shallot (finely minced)
Optional Ingredients
- sesame seeds
Directions
- In a small saucepan, combine rice vinegar, sugar, and salt. Simmer until sugar and salt dissolve. Remove from heat and cool to room temperature.
- Pour over cucumber and shallot. Allow to marinate at least 30 minutes before serving.
- Garnish with sesame seeds.
