Super Veggie Bowl

This delicious salad is full of healthy proteins and a variety of vegetables. Top it with your favorite dressing.
Ingredients
- 2 cups kale leaves (any variety) (chopped)
- 3 cherry tomatoes (halved)
- 1 egg (hard-boiled, cut in half)
- 1/4 cup cooked beets (cubed)
- 1/4 cup cooked chickpeas
- 1/2 artichoke heart
- 2 tablespoons gigante beans
- 2 tablespoons shredded carrots
- 2 tablespoons shredded daikon radish
- 1 tablespoon shredded beets
- 1 lemon wedge
- 1/4 teaspoon pepper
Directions
- Start with kale as your base in a large, shallow bowl. Arrange other ingredients on top as you like. Drizzle with your dressing of choice.
