Super Veggie Bowl

This delicious salad is full of healthy proteins and a variety of vegetables. Top it with your favorite dressing.

Ingredients

  • 2 cups kale leaves (any variety) (chopped)
  • 3 cherry tomatoes (halved)
  • 1 egg (hard-boiled, cut in half)
  • 1/4 cup cooked beets (cubed)
  • 1/4 cup cooked chickpeas
  • 1/2 artichoke heart
  • 2 tablespoons gigante beans
  • 2 tablespoons shredded carrots
  • 2 tablespoons shredded daikon radish
  • 1 tablespoon shredded beets
  • 1 lemon wedge
  • 1/4 teaspoon pepper

Directions

  1. Start with kale as your base in a large, shallow bowl. Arrange other ingredients on top as you like. Drizzle with your dressing of choice.
