Tacos Gobernador (Shrimp and Cheese Tacos)

Originally developed to impress the governor of Sinaloa, Mexico, these tacos are a bit like quesadillas. Melty cheese is a must!
Ingredients
- 3 tablespoons extra virgin olive oil
- 1 white onion (thinly sliced)
- 3 poblano peppers (seeded and thinly sliced)
- 3 Roma tomatoes (diced)
- Kosher salt (to taste)
- Pepper (to taste)
- 1/2 pound shrimp (peeled, deveined, and cut into bite-size pieces)
- Dash or two chipotle powder
- 8 (6-inch) whole wheat tortillas
- 1/2 pound Monterey Jack or pepper jack cheese (shredded)

Directions
- In a large skillet, heat oil over medium to medium-high heat. Add onion and sauté 3 minutes, or until soft.
- Add poblano and tomatoes. Season with salt and pepper. Sauté 3 minutes or until pepper softens. Add shrimp and chipotle powder, stirring occasionally. Cook for a minute or two, just until shrimp turns pink. Remove from heat, cover, and keep warm.
- To make tacos, place one tortilla on a griddle or non-stick skillet over medium to medium-high heat. Sprinkle with 1/4 cup cheese. When cheese melts, add a spoonful of warm shrimp filling and fold in half. Place on a warm platter while preparing remaining tacos.
- Serve warm, with lime wedges.
