Tamarind Date Chutney
Serves 10
This sweet-and-sour condiment brightens up many dishes. Serve it thick like a dip or make it thin and drizzle it over your favorite chaat.
Ingredients
- 5 ounces pitted dates (about 8 or 9 dates)
- 2/3 cup tamarind concentrate or paste
- 2 tablespoons dark brown sugar
- 1/4 teaspoon kosher salt
- 1/4 teaspoon ground cumin
- 1/4 teaspoon garam masala
- 1/4 teaspoon ground ginger
- 1/8 teaspoon cayenne pepper
Directions
- Place dates in a small saucepan and cover with an inch of water. Bring to boil over medium-high heat. Reduce heat and simmer on low until soft, about 10 minutes.
- Use tongs or a slotted spoon to transfer dates to a blender or food processor. Reserve liquid. Add remaining ingredients and blend until smooth. For a thinner consistency, add some of the water used to soften dates. Taste and adjust seasoning as desired.
- Cover and chill until ready to serve. Chutney can be made several days ahead of serving.
