Tamarind Date Chutney

Tamarind Date Chutney

Serves 10
This sweet-and-sour condiment brightens up many dishes. Serve it thick like a dip or make it thin and drizzle it over your favorite chaat.

Ingredients

  • 5 ounces pitted dates (about 8 or 9 dates)
  • 2/3 cup tamarind concentrate or paste
  • 2 tablespoons dark brown sugar
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon garam masala
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon cayenne pepper

Directions

  1. Place dates in a small saucepan and cover with an inch of water. Bring to boil over medium-high heat. Reduce heat and simmer on low until soft, about 10 minutes.
  2. Use tongs or a slotted spoon to transfer dates to a blender or food processor. Reserve liquid. Add remaining ingredients and blend until smooth. For a thinner consistency, add some of the water used to soften dates. Taste and adjust seasoning as desired.
  3. Cover and chill until ready to serve. Chutney can be made several days ahead of serving.
