Thai Style Chicken Wings

Thai-Style Chicken Wings

Serves 8

Ingredients

  • 4 pounds chicken wings (cut at joint into 2 pieces, tips saved for another use)
  • 2 teaspoons kosher salt
  • 1 cup Thai sweet chili sauce
  • 1/2 cup fish sauce
  • 3 tablespoons sriracha (more or less, to taste)
  • 2 limes (zested and halved)
  • 4 cloves garlic (minced)
  • 1/2 cup thinly sliced green onion
  • 1/4 cup chopped cilantro

Directions

  1. Preheat oven to 400°F.
  2. Line 2 large, rimmed baking sheets with foil. Oil foil or coat with non-stick spray. Divide wings evenly between sheets. Season with salt and pepper. Bake until skin is crispy, stirring once or twice, about 45 minutes. While wings bake, make sauce and dip.
  3. To a large bowl, add chili sauce, fish sauce, sriracha, and lime zest; mix well. Transfer half the sauce to small bowl. Stir in green onion and set aside to serve as dip. To the large bowl, add garlic.
  4. Transfer baked wings to large bowl with sauce and mix until wings are well coated.
  5. Return coated wings to baking sheets and bake another 10 minutes, until sauce begins to caramelize.
  6. Transfer wings to large platter. Squeeze lime halves over wings. Top with cilantro and serve with dip.
