Triple Chocolate Brownies

Like the name says, these brownies are rich with three types of chocolate. We like to add nuts and a bit of espresso powder, but for chocolate purists, the recipe works just as well without the additions.
Ingredients
- 4 ounces (1 stick) unsalted butter
- 1/4 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 2 large eggs
- 1/2 teaspoon kosher salt
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/2 cup semisweet chocolate chips
Optional Ingredients
- 1/2 teaspoon espresso powder
- 3/4 cup walnuts (toasted and roughly chopped)
Directions
- Preheat oven to 350°F. Butter an 8 x 8-inch baking dish.
- Place butter and chopped chocolate in a small saucepan over low heat. Stir occasionally until melted. Remove saucepan from heat. Whisk in cocoa powder. Set aside to cool.
- In a large mixing bowl, whisk together sugar, eggs, salt, vanilla, and espresso powder. Continue until mixture is pale and fluffy, about 2 minutes.
- Add melted and cooled chocolate mixture into egg mixture. Mix until thoroughly combined. Stir in flour, chocolate chips, and nuts until incorporated.
- Pour mixture into prepared baking dish. Bake until brownies are just set, about 25 minutes. Allow to cool at least 15 minutes before cutting into squares and serving.
