Vietnamese-Inspired Chicken Salad

This chicken salad is loaded with the bright, fresh flavors of Vietnamese cuisine. Leftovers can be turned into fresh spring rolls for a quick and easy snack.

Ingredients

  • Dressing:
  • 3 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons soy sauce
  • 1 tablespoon minced shallot
  • 1 teaspoon minced garlic
  • 1 teaspoon granulated sugar
  • 1/3 cup vegetable oil
  • Salad:
  • 2 cups shredded rotisserie chicken
  • 4 cups shredded savoy cabbage
  • 1/2 cup shredded carrot
  • 1/2 cup thinly sliced red bell pepper
  • 1 serrano chile (cut crosswise into thin slices)
  • 1/4 cup chopped cilantro
  • 2 tablespoons chopped fresh mint
  • Kosher salt (to taste)
  • 1/2 cup roasted peanuts (chopped)

Directions

  1. In a small bowl, whisk together all dressing ingredients except oil. Slowy drizzle in oil while constantly whisking.
  2. In a large bowl, combine chicken, cabbage, carrot, bell pepper, chile, and herbs. Drizzle with dressing and toss. Season with salt, to taste.
  3. Garnish with peanuts and serve.
